عَنْ عُثْمَانَ بْنِ حُنَيْفٍ أَنَّ رَجُلًا ضَرِيرَ الْبَصَرِ أَتَى النَّبِيَّ صَلَّى اللَّهُ عَلَيْهِ وَسَلَّمَ فَقَالَ : ادْعُ اللَّهَ أَنْ يُعَافِيَنِي قَالَ إِنْ شِئْتَ دَعَوْتُ وَإِنْ شِئْتَ صَبَرْتَ فَهُوَ خَيْرٌ لَكَ قَالَ فَادْعُهْ قَالَ فَأَمَرَهُ أَنْ يَتَوَضَّأَ فَيُحْسِنَ وُضُوءَهُ وَيَدْعُوَ بِهَذَا الدُّعَاءِ اللَّهُمَّ إِنِّي أَسْأَلُكَ وَأَتَوَجَّهُ إِلَيْكَ بِنَبِيِّكَ مُحَمَّدٍ نَبِيِّ الرَّحْمَةِ يَا مُحَمد إِنِّي أَتَوَجَّهُ بِكَ إِلَى رَبِّي فِي حَاجَتِي هَذِهِ لِتُقْضَى لِيَ اللَّهُمَّ فَشَفِّعْهُ فِيَّ (الترمذى فى السنن/3502)
Carrots Kalaqand
Carrots are a miracle of my Allah's creations, & its Halwah & Gajrela are popular. But when its Kalaqand is made with Halal Cottage Cheese, it becomes the most delicious Carrot confectionary.
Recipe is as under (Preparation time : 2 hours)
Carrots : 2 kg, Milk : 3 liters to obtain 500 grams of Cottage Cheese (Paneer), Sugar : 250 grams, Date Stones powder, Citron Zest, some almonds & Desi Ghee
Make 500 grams of Cottage Cheese (Paneer) from 3 liters of milk. Grate the carrots & cook them at low heat in their own water, when they tender, wait till they cool & blend them with Date Stones powder, Citron Zest, sugar & almonds in a food processor, once the mixture homogenizes, add Cottage Cheese & blend again, you will need multiple processing to obtain a beautiful paste. Fry in Ghee till all the moistures evaporate, transfer to a dish & press with a spoon to solidify, put in refrigerator for 2 hours & then you can cut the Kalaqand in slices, that is all. If sugar percentage is kept low, Paneer Kalaqands are always so delicious.
