How to make Saweeq (SATTU) ?
Saweeq is the Arabic name for Barley's roasted flour (whole with husk), which is called SATTU in Urdu. It is one of the important ingredients in many of Tibb-e-Nabawi's blessed foods. In India & Pakistan, some people prepare Sattu by combining Wheat, Barley & Chickpeas, but the patent SAWEEQ (Sattu) purely consists of Barley. Saweeq is so easy to make, you will have to dry roast Barley grains (whole with husk) at low heat, while roasting, keep stirring the grains with a wooden spoon, otherwise grains at the bottom will over-burn. In villages, Barley grains are dry-roasted in sand, it is the easiest method during which Barley grains burst like Pop-Corn & some sand particles may enter inside the husk, so you have to be very careful. When they cool down, you have to vigorously rub the grains with a cloth, so that all sand particles come out & then you need to sieve the roasted grains properly. Dry-roasted Barley grains are then ground to obtain SAWEEQ (Sattu), which can be kept either as fine flour OR coarsely ground. Roasting should be slow at low heat, so that both the husk & grain are cooked properly, at high temperature, husk will roast before the grain & you will never achieve perfect results.
To prepare Saweeq at your kitchen, another method is to bring WHOLE Barley flour (with husk) and dry-roast the flour at low heat for 10-15 minutes, stirring it continuously. Once the flour is properly roasted, it releases a pleasant smell & the color darkens slightly. Please also watch this wideo:
Among the wonders of Saweeq, you can make :
- Talbinah with Saweeq & water, (milk/honey can be an option)
- Mutton+barley soup (by adding Saweeq to your lamb / mutton curry)
- Milk shake by adding Saweeq, milk & some fruits (dates, bananas, nuts, etc.) in your blender
- Sattu drink in water (with jaggery / honey / molasses)
- HAIS (with tendered dates in butter), the Halwa that was served at the Waleemah of Safya Radi Allaho Anha, when Prophet Muhammad Sallallaho Alaihe Wasallam was returning from Khyber.
- Barley Soups with vegetables & lentils
All of the above will bring you back the memories of Prophet Muhammad Sallallaho Alaihe Wasallam. Whenever you are traveling, keep Saweeq (Sattu) in your hand bag, we have a feeling that Sahabah Radi Allaho Anhum always took Saweeq in their journeys, as it never rots quickly & then it is easy to prepare, just add it to water (sweeten with Honey) & it will serve both as a drink & food. BARLEY :
Barley is cold & dry in the first degree, best is the fresh whose husk is whiter (husk becomes blackish when Barley gets old), & it is lesser in nutrition & heat than wheat. Barley water helps against coughing and throat roughness, relieves the irritant excess excrement, produces more urine, cleanses the stomach, quenches the thirst and extinguishes heat. It also provides comfort and has a decomposing quality. Ibn-e-Majah narrated that Aishah Radi Allaho Anha said: "When a member of the family of Rasoolullah (Sallallaho Alaihe Wasallam) would fall sick, he would order that Hasa (soup prepared with barley flour) ~ Barley soup is made and then the ill person would be commanded to have some of it.
الحَسَا :طعامٌ رقيق يُصنع من الدَّقيق
الحَسَاءُ : شُربة أو مرق
Saweeq (SATTU) :
The mostly used Saweeq is made from BARLEY, because it is colder in nature than Saweeq made with wheat. Barley's Saweeq constipates slightly, but the problem can be fixed by taking it with honey. Barley's Saweeq is the best food during FEVER, it strengthens the stomach, quenches the thirst & removes the feeling of Nausea, it is added to some Poultices (an example is Poultice of Habb-al-Rashaad+Barley's Saweeq+vinegar used for Sciatica).
