Sweet Potatoes in Olive Oil

One of the valuable vegetables ignored today is Sweet Potato, it is a miracle of my Allah's creations, extremely high in Vitamin "A" & Vitamin "C", Manganese, Copper, Potassium, IRON, proteins with Anti-oxidants & a lot of dietary fiber, you should have it at least once per week & your lethargy will go away. Usually, people boil it simply for eating, but its curry with carrots is a unique recipe, put all ingredients all together & cook with the blessed olive oil (at low heat), beautiful colors will be released which your eyes will love Insha'Allah. Furthermore, boiled sweet potato can be oven-baked with eggs, butter and NUTS of your choice like sesame, fennel, flax seeds, etc. And you can dress Sweet Potato's cake with honey & it is a wonder. There is saying that a single Sweet Potato's nutritional value is equal to 20 potatoes.
